Only fully ripe cherries are selected and processed using DRD DF (Dark Room Dry Fermentation). Cherries undergo slow dry fermentation while gradually reducing water activity, driven by natural enzymatic development.
Drying continues in a dark, temperature-controlled environment for 25–30 days with low airflow, preserving clarity while building depth and sweetness.
